What you need

tsp ground cumin

cup cooked long grain rice

tsp liquid smoke

tbsp butter

tsp onion powder

tsp creole seasoning

tsp apple cider vinegar

bacon strips

can red beans

cup chicken broth

tsp garlic powder

bunch green onion
Instructions
0 Cook the bacon in a saucepan until crisp. Remove, crumble, and set aside, leaving bacon grease in pan. (Or start with 3 Tbsp reserved bacon fat.) 2 Add beans (1 can drained, 1 with liquid), chicken broth, garlic powder, onion powder, cumin, Creole seasoning, cayenne, and liquid smoke. Stir well. 3 Simmer 15–20 minutes, stirring often. Remove ~1 cup beans, mash with potato masher, then return to pot for creamy texture. 4 Stir in apple cider vinegar + 1 Tbsp butter at the end. Adjust seasoning with salt/Creole seasoning to taste. 5 Serve beans in bowls, scoop rice on top (Popeyes-style), garnish with green onions and crumbled bacon.View original recipe
